Tropical Chicken Bowl (for a Crowd)

Sometimes called “Huli Huli Chicken bowl”, this isn’t about fast fixes or show-off serving—it’s about gathering and giving. Designed to feed a few friends or a crowd, the Tropical Chicken Bowl combines grilled chicken thighs, fresh fruit, herbs, and rice into a vibrant, one-dish meal. It holds up well on buffet lines, offers flexibility for common dietary needs (gluten-free, dairy-free, nut-free), and allows host to focus on guests—whether you're hosting a summer party or setting up a relief station after a storm.
Tropical Chicken Bowl (Gluten-Free)
Serves ~4 (scales easily) | Ready in ~30–40 min
For the Chicken
1.5–2 lbs boneless, skinless chicken thighs (sliced before or after grilling)
Cooking oil for pan or grill
Choose one sauce option below (both gluten-free):
Option A: Classic Huli Huli Sauce (but with vinegar)
1/4 cup gluten-free soy sauce or tamari
1/4 cup ketchup
1/4 cup pineapple juice
2 tbsp brown sugar
1 tsp garlic powder
1 tsp ground ginger
1 tsp rice vinegar
Option B: Boosted Teriyaki Sauce
1/4 cup gluten-free bottled teriyaki sauce (check label)
2 tbsp pineapple juice
1 tbsp ketchup
1 tbsp brown sugar
1 tsp rice vinegar
Pinch of garlic or ginger powder (optional)
For the Bowl
2 cups cooked jasmine or white rice
1 ripe mango, diced
1–2 small tomatoes, chopped
1/2 cup diced pineapple (fresh or canned, drained)
2 green onions, chopped
2 tbsp chopped fresh cilantro
Optional: sesame seeds, lime wedges, spicy mayo (e.g., sriracha + mayo)
Instructions
Make the sauce.
In a small bowl, whisk together the ingredients for either Option A or B. Set aside half the sauce for basting or topping later.Cook the chicken.
Heat oil in a skillet or grill pan over medium-high heat. (Alternative: grill outside!)
Optional: Marinate chicken in half the sauce for 15–30 minutes before cooking.
Cook ~5–6 minutes per side, until browned and cooked through as indicated by 170-degree temperature from meat thermometer. Brush with reserved sauce as it finishes. Let rest, then slice (if not sliced before grilling.)Prep the toppings.
Dice mango, tomatoes, and pineapple. Chop green onions and cilantro.Assemble the bowls.
Scoop rice into bowls or onto plates. Add sliced chicken on top. Add diced fruit and veggies. Sprinkle with green onion and cilantro. Spoon on extra sauce. Note: the serving line works best if all toppings are added to bowl ahead of serving, but servers might provide soy sauce options for guests.
